Tim Martin is responsible for the restaurant’s innovative menu, which features European influences. The restaurant occupies a former art shop, where the 100-seater restaurant and bar serve classic aperitifs and acclaimed wines alongside Australian favorites.
2. KLEIN JAN – SOUTH AFRICA
In Tswalu Kalahari national park, Klein JAN is nestled in an old farmhouse known as Boscia House. Klein JAN’s sustainable ethos emphasizes local organic producers, farmers and artisans aligned with modern Kalahari cuisine. The restaurant was established by South African chef Jan Hendrik van der Westhuizen, who has previous experience in Nice in France.
3. COCHINCHINA BAR – BUENO AIRES
Established by Ines de Los Santos, CoChinChina bar is a restaurant and bar offering Southeast Asian-influenced cocktails and meals to the residents and visitors of Bueno Aires. The wall is made of fake goldfish in plastic bags, while the (fake) counter is made of resin-sealed eggshells. This fine-dining spot is located in the heart of Bangkok’s Chinatown, established by chef Pichaya Utharntharm. The menu is based on her roots as a Thai Chinese personality, as evidenced in its 20-course menu. Established by Chef Florence knight Jonny Gent (an artist) and managed by Jon Spiteri, the restaurant is located in a former courthouse room that requires you to ride an elevator before accessing the artfully designed room. The menu is based on a British Mediterranean menu with crab croquettes and lemony chickpea flour fries as part of its offerings.
6. FISH BUTCHERY – WATERLOO, SYDNEY, AUSTRALIA
Fish butchery is chef Niland’s fourth restaurant and opened in February 2022. The restaurant serves fresh fish and cooked specials, a testament to Niland’s expertise in fish cookery. Opening menu items include a Yellowfin tuna cheeseburger, Murray cod souvlaki and tuna meat pie, all accompanied by floor-to-ceiling windows overlooking the marble butchery counter.
